Well, the secret got out that you could actually make them at home. There is no baking with this Kahlua truffles recipe either, so that is a bonus.

Ingredients

  • Chocolate Graham Crackers- Make everything so good with their chocolate flavor and crunch.
  • Powdered Soy Milk- They now have powdered coconut milk. There may be others too.
  • Dairy-Free Milk- Adds flavor and necessary liquid.
  • Kahlua- Pretty much goes without saying, but the coffee liqueur flavor addition is delicious.
  • Dates- A wonderful sweetener, and they add a nice texture too.
  • Pecans- Finely chop for the covering of the Kahlua chocolate truffles.

Instructions

  • Process the pecans fine, as these are what the finished balls will be rolled in. You may use any ground nut or seed that you like.
  • Crush the chocolate graham crackers into a fine grain or, more easily, put them in afood processorand grind.
  • Put the crushed graham crackers in alarge bowland add the dry soy milk. There are other varieties since I made this recipe.
  • Stir in dairy-free milk and Kahlua. Any of your favorites will do. Just make sure it isn't a sweetened or vanilla variety.
  • Mix until all is moistened. It will take less than a minute.
  • Stir in the finely chopped dates.
  • Divide the dough in half and then each half again and continue until you have 48 balls.
  • They are sticky as you divide, but when you roll the truffles in the palms of your hands, they do not stick at all.
  • Roll the truffle balls into the finely ground pecans.
  • All done. Store leftover Kahlua chocolate truffles in an airtight container in the fridge.

Substitutions:

  • Roll the truffles in vegan melted chocolate chips to create a delicious chocolate coating. White chocolate chips, dark chocolate chips, or milk chocolate chips all make great dipping chocolate.

  • Use coffee powder, instant coffee, or cocoa powder to roll the truffles in.

Ingredients

  • 2 ½ cups chocolate graham crackers - ground, about 10 ounces
  • ¼ cup powdered soy milk
  • ½ cup dairy free milk
  • 3 tablespoons Kahlua
  • cup dates - finely chopped
  • cup pecans - finely chopped or processed in a food processor

    This recipe sounds delish! But do you know a way to make them gluten-free?
    I have an allergic reaction when I eat certain things with wheat in them. Graham crackers is one of those. I love them but they don’t love me.

    I haven't found chocolate gluten free graham crackers yet. They have oat ones on amazon but not chocolate. You could buy any chocolate gluten free cookie that you like and crush them. Not ones with fillings though.
